Grilled Lamb with Mint Jelly recipe | COLLECTION NICE FOOD RECIPES

COLLECTION NICE FOOD RECIPES - This is our new RECIPE:

Grilled Lamb Kebabs recipe


Ingredients:

1 pound ground lamb
1 cup finely chopped onion
½ cup chopped fresh cilantro
1 tablespoon melted butter
1 tablespoon sliced green Serrano chili pepper
1 teaspoon garam masala
½ teaspoon ground black pepper
Sea salt, to taste
Vegetable oil, for grill

Directions:

1) Preheat grill; lightly brush grill with oil.

2) Combine all ingredients, except oil, in a large bowl; mix thoroughly with hands. Shape into 1-inch pieces; thread onto skewers.

3) Place skewers on greased grill; cook until golden, turning once, about 8 minutes total. Serve warm.

Grilled Lamb Chops recipe | COLLECTION NICE FOOD RECIPES

COLLECTION NICE FOOD RECIPES - This is our new RECIPE:

Grilled Lamb Chops recipe

Ingredients:

1 (2-pound) rack of lamb, frenched
1 cup grape jelly
1 cup Dijon mustard
1 cup white wine
½ cup butter
½ cup minced shallots
2 teaspoons minced fresh rosemary

Directions:

1) Whisk together jelly and mustard in a small bowl. Brush over lamb to coat completely. Cover and refrigerate overnight.

2) Preheat grill. Remove lamb from marinade, shaking off excess liquid. Place on grill and cook 5 minutes, turning once, basting with sauce.

3) Meanwhile, prepare the sauce: Combine wine, butter, shallots, and rosemary in a small saucepan; bring to a boil over high heat. Reduce to a simmer and cook until reduced by half and thick, about 10 minutes.

4) To serve, pour sauce over warm lamb.

Barbecued Lamb Riblets | COLLECTION NICE FOOD RECIPES

ingredients
14 lb Lamb breast, cut in riblets
1 c Salad oil
2 ga Barbecue sauce
Salt
Pepper

Cut the lamb breast into riblets. Cut lengthwise with a hand meat saw or power saw about 1 1/2 to 2 inches wide the full length of the breast. Then cut crosswise into 3 inch lengths.
Prepare the barbecue sauce.
Preheat oven to 375F-190C
Place the salad oil in the braiser and heat. Add the riblets and brown thorouthly. Turn occasionally with a kitchen fork.
Pour the prepared barbecue sauce over the riblets. Cover braiser and place in preheated oven.
Bake until the riblets are tender. Stir frequently to avoid scorching or sticking. Do not overcook, they will be lacking in appearance when served. Remove from the oven and check the seasoning.
Place in a steam table pan. Dish up 2 riblets per portion. Accompany with baked rice.

Lamb and Rice Casserole | COLLECTION NICE FOOD RECIPES

COLLECTION NICE FOOD RECIPES - This is our new RECIPE:


This quick and easy family meal is a great way to use leftover lamb. Use you food processor to mince the lamb to make preparation even quicker.

Ingredients:

  • 1 1/2 cups chopped onion
  • 1/2 cup chopped celery
  • 2 tablespoons butter
  • 2 cups ground or minced roast lamb
  • 2 cups cooked rice
  • 2 cans (14.5 ounces each) diced tomatoes, drained
  • 1 1/2 teaspoon salt
  • 1 teaspoon paprika
  • 1 teaspoon Worcestershire sauce
  • 2 slices bacon, finely diced

Preparation:

In a skillet, cook the onion and celery in butter over medium-low heat. Add the ground or minced roast lamb (a food processor will grind cooked lamb quickly), cooked rice, tomatoes, salt, paprika, and Worcestershire sauce. Sprinkle the diced bacon over top. Bake in a 375° oven for 35 to 45 minutes.
Serves 4.

Greek lamb with crispy potatoes | COLLECTION NICE FOOD RECIPES

COLLECTION NICE FOOD RECIPES - This is our new RECIPE:


Ingredients (serves 4)

  • 3 garlic cloves, crushed
  • 1/4 cup (60ml) olive oil
  • 2 tbs chopped rosemary leaves
  • 1 lemon, sliced
  • 4 x 4-cutlet lamb racks
  • 10 chat potatoes
  • 150g vine-ripened cherry tomatoes
  • 1 cup (160g) pitted kalamata olives
  • Good-quality mint sauce, to serve (optional)

Method

  1. Combine garlic with 2 tablespoons of the oil, rosemary and lemon in a bowl. Add lamb, season with salt and pepper, and toss to coat. Marinate for 15 minutes.
  2. Preheat the oven to 180°C.
  3. Meanwhile, part-cook the potatoes in a pan of boiling salted water for 5-6 minutes, then drain.
  4. Flatten each potato with a potato masher and place in an oiled roasting pan. Drizzle with remaining 1 tablespoon of olive oil and season well. Roast in the oven for 15 minutes or until golden.
  5. Meanwhile, heat a large frypan over medium-high heat. Sear the lamb on all sides. Place lamb and any pan juices on top of the potatoes with lemon slices and roast for 10 minutes (for medium-rare, or until cooked to your liking). Remove lamb, cover loosely with foil and rest for 5 minutes. Add tomatoes and olives to the potatoes, then return pan to the oven for a further 5 minutes until tomatoes soften. Serve the lamb on the potato mixture, with mint sauce if desired.

Savory Slow Cooker Lamb Shanks With Rosemary and Mushrooms | COLLECTION NICE FOOD RECIPES

Rosemary and mushrooms help to flavor this melt-in-your-mouth tender lamb. This lamb cooks for about 10 to 12 hours, and it's perfect for a busy day meal.

Ingredients:

  • 2 tablespoons olive oil
  • 4 to 6 lamb shanks, about 6 pounds
  • 1 cup Pinot Noir or Burgundy, or other dry red wine
  • 3 tablespoons grainy Dijon mustard
  • 1 teaspoon balsamic vinegar
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon black pepper
  • 1 heaping tablespoon fresh chopped rosemary, or about 1 1/2 teaspoon dried rosemary
  • 1 tablespoon chopped parsley, or 1 teaspoon dried parsley flakes
  • 4 large cloves garlic, finely minced
  • 16 ounces sliced mushrooms
  • 1 large carrot, diced
  • 12 to 16 ounces small white onions, peeled, or 2 medium onions, cut in wedges

Preparation:

*To peel the onions, drop in boiling water and boil for 3 minutes. Transfer to cold water. Cut off root end and slip off skins. Frozen small white onions may be used. In a large skillet over medium-high heat, heat the olive oil. Cook the lamb shanks in the hot oil, turning frequently, until browned on all sides. Place the browned lamb shanks in a 5 to 7-quart slow cooker. Add the peeled onions or onion wedges to the slow cooker.
Meanwhile, combine the wine with mustard, vinegar, salt, pepper, rosemary, parsley, and garlic; set aside.
To the hot skillet, add mushrooms and carrots. Cook the mushrooms and carrots for about 5 minutes, stirring constantly. Spoon the vegetables over the lamb shanks. Pour the wine mixture into the skillet, scraping up the browned bits with a spatula. Bring to a simmer; pour over the lamb shanks in the slow cooker.
Cover and cook on HIGH for 2 hours. Reduce heat to LOW and cook for 6 to 8 hours longer.
Serves 4 to 6.

Balsamic lamb with eggplant and spinach | Collection of Nice Food Recipes

Ingredients (serves 4)

  • 1/4 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 2 tablespoons rosemary leaves, roughly chopped
  • 550g lamb loin fillets
  • olive oil cooking spray
  • 6 baby eggplant, trimmed, halved lengthways
  • 100g baby spinach
  • 250g hommus dip, to serve

Method

  1. Combine vinegar, oil, rosemary and salt and pepper in a shallow ceramic dish. Add lamb. Turn to coat. Cover and refrigerate for 1 hour (or longer if time permits).
  2. Preheat a barbecue plate on mediumhigh heat. Remove lamb from marinade. Barbecue for 5 to 6 minutes each side for medium or until cooked to your liking. Transfer to a plate. Cover with foil and set aside for 5 minutes to rest.
  3. Spray eggplant with oil. Barbecue for 1 to 2 minutes each side or until tender.
  4. Slice lamb. Arrange spinach on a serving platter. Top with eggplant and lamb. Season with salt and pepper. Serve with hommus.
