Spicy Salmon Broth | COLLECTION NICE FOOD RECIPES

COLLECTION NICE FOOD RECIPES - This is our new RECIPE:


Preparation  20 minutes
Serves  4
1 tablespoon vegetable oil
25g (1oz) fresh root ginger, peeled and cut into matchsticks
2 large garlic cloves, peeled and sliced into slivers
1 large fresh red chilli, seeded and cut into matchsticks
1 whole bird's eye chilli
1 stem of lemongrass, chopped
1.2 litres (2 pints) chicken or vegetable stock
3 tablespoons Thai fish sauce (nam pla)
1 tablespoon light soy sauce ( preferably Kikkoman's)
juice of 1 lime
4 spring onions, finely shredded
175 - 225g (6 - 8 oz) salmon fillet, cut into medallions ( see page 10 -11)
3 tablespoons roughly chopped fresh coriander
freshly ground sea salt and freshly ground black pepper

I normally make this soup using a blend of fish stock and mussel juices; however, I know that most home cooks don't have ready access to that kind of kit, and so for this book I experimented using a fish stock cube - not great. I then tried my personal favourite, a Knorr chicken stock cube, and found that it made a really good soup, although perhaps not acceptable to "pescatarians" ( I know, it was a new one on me, too - it means fish - eating vegetarians!); alternatively you could use a vegetable stock cube. The base can be made in advance and freezes well. Add the salmon just prior to serving. Be careful not to overcook the salmon; it needs only a couple of minutes. You can check by breaking one of the pieces open - it should still be nice and pink inside.
1 Heat the oil in a large pan and add the ginger, garlic, chilli and lemongrass. Cook over a low heat until softened.
2 Add the stock and splash in the Thai fish sauce, soy sauce and lime juice. Bring to the boil, then turn down the heat and simmer for 10 minutes. Add the spring onions and cook for a further 3 minutes.
3 Add the fish with the coriander and simmer for 2 minutes or until the fish is cooked. Taste, season with salt and pepper and add more fish sauce or soy sauce if you like - it should be quite punchy! Ladle into warm bowls and serve.

Grilled Lamb with Mint Jelly recipe | COLLECTION NICE FOOD RECIPES

Grilled Lamb Kebabs recipe


Ingredients:

1 pound ground lamb
1 cup finely chopped onion
½ cup chopped fresh cilantro
1 tablespoon melted butter
1 tablespoon sliced green Serrano chili pepper
1 teaspoon garam masala
½ teaspoon ground black pepper
Sea salt, to taste
Vegetable oil, for grill

Directions:

1) Preheat grill; lightly brush grill with oil.

2) Combine all ingredients, except oil, in a large bowl; mix thoroughly with hands. Shape into 1-inch pieces; thread onto skewers.

3) Place skewers on greased grill; cook until golden, turning once, about 8 minutes total. Serve warm.

Grilled Lamb Chops recipe | COLLECTION NICE FOOD RECIPES

Grilled Lamb Chops recipe

Ingredients:

1 (2-pound) rack of lamb, frenched
1 cup grape jelly
1 cup Dijon mustard
1 cup white wine
½ cup butter
½ cup minced shallots
2 teaspoons minced fresh rosemary

Directions:

1) Whisk together jelly and mustard in a small bowl. Brush over lamb to coat completely. Cover and refrigerate overnight.

2) Preheat grill. Remove lamb from marinade, shaking off excess liquid. Place on grill and cook 5 minutes, turning once, basting with sauce.

3) Meanwhile, prepare the sauce: Combine wine, butter, shallots, and rosemary in a small saucepan; bring to a boil over high heat. Reduce to a simmer and cook until reduced by half and thick, about 10 minutes.

4) To serve, pour sauce over warm lamb.

Pistachio Ice Cream | COLLECTION NICE FOOD RECIPES

Pistachio Ice Cream
1 1/4 cups pistachio

2 1/2 cups milk

3 eggs

1 cup sugar

1 cup heavy cream whipped

1 teaspoon almond extract

1 teaspoon vanilla extract



Shell the pistachio. Blanch the nuts by placing them in a bowl and pouring boiling water over it. Let stand for 1 minute. Drain, and peel the pistachios. Blend the nuts, the milk, the eggs, and the sugar until you have a green smooth liquid. Pour into a saucepan. Cook over low heat until the custard thickens, about 25 minutes or so. Do not boil or it will curdle. Let the mixture cool and add vanilla and almond extracts. Stir and Fold in whipped cream.

Pumpkin Ice Cream | COLLECTION NICE FOOD RECIPES

Pumpkin Ice Cream
1 1/2 cups light cream

6 egg yolks

3/4 cup sugar

1/2 teaspoon vanilla extract

3/4 teaspoon pumpkin pie spice

1 1/2 cups heavy cream

1 1/2 cups canned solid pack pumpkin

Scald cream in heavy saucepan. Whisk yolks, sugar and vanilla in medium bowl. Gradually whisk in the cream, add the spice. Return to saucepan and stir over medium-low heat until mixture thickens, about 10 minutes; do not boil. Remove from heat. Whisk in the heavy cream and the pumpkin. Strain into bowl. Refrigerate until well chilled.

Transfer to ice cream maker and process according to manufacturer's instructions.
