Spicy Salmon Broth | COLLECTION NICE FOOD RECIPES

COLLECTION NICE FOOD RECIPES - This is our new RECIPE:


Preparation  20 minutes
Serves  4
1 tablespoon vegetable oil
25g (1oz) fresh root ginger, peeled and cut into matchsticks
2 large garlic cloves, peeled and sliced into slivers
1 large fresh red chilli, seeded and cut into matchsticks
1 whole bird's eye chilli
1 stem of lemongrass, chopped
1.2 litres (2 pints) chicken or vegetable stock
3 tablespoons Thai fish sauce (nam pla)
1 tablespoon light soy sauce ( preferably Kikkoman's)
juice of 1 lime
4 spring onions, finely shredded
175 - 225g (6 - 8 oz) salmon fillet, cut into medallions ( see page 10 -11)
3 tablespoons roughly chopped fresh coriander
freshly ground sea salt and freshly ground black pepper

I normally make this soup using a blend of fish stock and mussel juices; however, I know that most home cooks don't have ready access to that kind of kit, and so for this book I experimented using a fish stock cube - not great. I then tried my personal favourite, a Knorr chicken stock cube, and found that it made a really good soup, although perhaps not acceptable to "pescatarians" ( I know, it was a new one on me, too - it means fish - eating vegetarians!); alternatively you could use a vegetable stock cube. The base can be made in advance and freezes well. Add the salmon just prior to serving. Be careful not to overcook the salmon; it needs only a couple of minutes. You can check by breaking one of the pieces open - it should still be nice and pink inside.
1 Heat the oil in a large pan and add the ginger, garlic, chilli and lemongrass. Cook over a low heat until softened.
2 Add the stock and splash in the Thai fish sauce, soy sauce and lime juice. Bring to the boil, then turn down the heat and simmer for 10 minutes. Add the spring onions and cook for a further 3 minutes.
3 Add the fish with the coriander and simmer for 2 minutes or until the fish is cooked. Taste, season with salt and pepper and add more fish sauce or soy sauce if you like - it should be quite punchy! Ladle into warm bowls and serve.

Ingredients:
- Chillies dry (gw pake arbol chile), seeded, trimmed
- turmeric one knuckle (gw pake yg powder, in kira2 ONLY!)
- ginger one knuckle
- 1 hazelnuts, sliced ​​kecil2
- 4 pieces of red onion, sliced
- 4 pieces of garlic, sliced

- Sugar to taste

Method Battered Fish

  1. Make the batter by mixing all the ingredients except for the fish and the oil in a large mixing bowl. 
  2. Remove the skin and any bones from the fish fillets. 
  3. Pour the oil into a wide and deep pan (we used a wok), turn on the heat to medium and heat the oil to 140°c (if you don’t have a thermometer, drop a few drops of the batter into the oil when it’s hot, the batter should immediately start bubbling and rise to the surface).
  4. Put the fish fillets into the bowl of batter and mix them around so that they are all completely covered.   • Enough stuff to make a bed (see below)
  • Enough olive oil to coat the fish
  • 30ml olive oil
  • 1 teaspoon of lemon juice
Preparation Time: 10 minutes
Cooking Time: 15 - 20 minutes
Serves: Depends on initial quantity 

Method Baked Fish

  1. Make sure the fish does not have any bones left in the flesh. If it does, pull them out with a pair of tweezers or electricians pliers (be sure to clean them first).
  2. Preheat the oven to 200°c.
  3. In a roasting dish, make a bed to put the fish on. Essentially, what you are creating is a platform to raise the fish off the bottom of the tin to prevent it from stewing in its own juices and sticking to the bottom of the dish. The bed can be made of vegetables such as fennel, onion, lemon, spring onion, or courgette; or bunches of herbs such as fennel, dill, parsley, tarragon, chervil, or rosemary; or any combination of these; or anything else you like! If using vegetables, they can also be served with the fish once it has cooked. We chose to use a quartered, braised fennel bulb.
  4. Coat the fish in olive oil, season it with salt & pepper, put it on the bed (skin side up if it has skin) and place it in the oven. You can also add any seasonings or herbs you like to the fish at this point. We decided to skewer each piece of fish with a stick of rosemary.
  5. The time it will take to cook depends on the thickness of the fish. A piece of fish 2cm thick will take 15 minutes to cook; a piece 5cm thick will take 20 minutes. When it is cooked, the fish should be opaque and slightly firm to the touch.
  6. Remove the fish and the bed from the roasting tin and whisk up the lemon juice and olive oil with the juices left in the bottom of the tin to make the sauce.
  7. Serve. We served it with sautéed potato, the braised fennel and the sauce.
